jambalaya

Ingredients 
  • 3 boneless chicken breasts, chopped
  • 1 pack of cooked sausage
  • 2 chopped white onions
  • 3 chopped bell peppers (green / red)
  • 2 cups chopped celery
  • Garlic, chopped
  • Tomato paste - 2 small cans
  • Tomatoes - large can
  • Hot sauce
  • Cajun spices
  • Black pepper
  • Dash of Cayenne pepper
  • 8 cups chicken stock
  • 4 cups white rice, uncooked
  • 2 tablespoons olive oil
Instructions

  • Saute chicken in olive oil
  • Mix in cut sausage
  • Stir in onion, bell pepper, celery and garlic
  • Mix in tomato paste and tomatoes
  • Add hot sauce, spices, and black pepper
  • Saute until tomato paste starts browning and onion is translucent (about 10 minutes)
  • Add rice, stir in chicken stock
  • Let simmer until rice is tender (20 min)
