Recipe: Zucchini Spaghetti Bowl

Zucchini Spaghetti Bowl
Zucchini Spaghetti Bowl
  • 1 cup cooked zucchini (spiral zucchini and lightly cook for 2 minutes with 1 tsp oil) 
  • 1⁄2 cup(s) cooked quinoa
  • 6 oz cooked 99% fat-free ground turkey breast
  • 1 medium fresh tomato(es), dice and cook into ground turkey
  • 1 cup baby arugula
  • 1⁄4 cup sliced fresh radish(es)
  • 1⁄4 cup shredded carrot(s)
  • 1⁄3 cup edamame (shelled)
  • Kimchi to taste
  • Sriracha hot sauce to taste
Makes one serving.
